- 1/2 kg tortillas de maíz
- 300 g crema
- 500 g queso manchego
- 6-7 chiles poblanos
- 1 lata grande elote o 3 elotes desgranados
- 4 tomates rojos
- 1 Chile mirasol (guajillo)
- 1 cebolla mediana
- 1 diente ajo
- 1 cubito caldo de pollo
- 500 g pechuga de pollo cocida y desmenuzada
- c/n Aceite para freír
- al gusto Sal

- Primero preparamos los chiles poblanos poniéndolos a fuego directo para quemar la piel y los ponemos en una bolsa a "sudar". Mientras tanto ponemos a cocer los tomates con el chile mirasol.



- Ya cocidos los tomates y el mirasol se licúan junto con el diente de ajo y sal al gusto. Se pelan, desvenan y cortan en rajas los chiles poblanos, también se rebana la cebolla en medias lunas como en la foto. En una olla bien caliente con aceite sofreímos primero la cebolla hasta que se haga transparente y agregamos las rajas con el consomé de pollo y dejamos que se sofrian juntos por unos minutos



- Agregamos al sofrito la salsa que licuamos y lo probamos de sal. Ya que hierva un poco se agregan los granos de elote y el pollo desmenuzado. Se revuelve y se deja hervir por 5 minutos más o menos y se apaga. Mientras tanto podemos preparar las tortillas friéndolas en un sartén con aceite bien caliente por ambos lados sin dejarlas dorar



- Ya que estén listas las tortillas, ponemos sobre un refractario horneable una cama de tortillas fritas, luego una cama de la mezcla de pollo con salsa y vegetales, luego ponemos crema y queso, después encima otra cama de tortillas y se repiten los pasos hasta cubrir la profundidad del molde. Al final se cubre de suficiente queso para gratinarlo.



- Se precalienta el horno a 180°C, se cubre el molde con aluminio y se mete al horno por 15-20 Min. Si se desea al final se deja sin el aluminio 5 minutos más para que se tueste un poco el queso formando una costra dorada. Se sirve cortando en cuadros.
